Here are the menu plans for dinners in my home for the upcoming week. Hubby seems to be okay with a mostly vegan venue right now. So six of the seven family meals are straight vegan, with one meat meal thrown in (with a vegan alternative).
- Monday - Gnocchi and Basic Red Sauce, Kale
- Tuesday - Creamy Cauliflower Soup, salad, rolls
- Wednesday - Sloppy Joes, rolls, cooked carrots
- Thursday - Lemon chicken (lime chicken option), rice, broccoli (faux chicken patty)
- Friday - Pasta primavera, salad
- Saturday - Lynn's Meatloaf, potatoes, green beans
- Sunday - Mushroom Stroganoff, spinach salad
Breakfast daily is rolled oats (about 1/2-3/4 cup), with equal parts water, cooked 2 minutes in the microwave (stir after 1 minute), topped with frozen blueberries (about 1/2 cup).
Lunch daily is leftovers. I usually heat up leftovers with a generous handful of baby spinach leaves, and then when done heating I top with 1 Tbsp. ground flax seed. Any week my leftovers get "too old", I zip-bag them in single servings and toss them in the freezer for weeks when my meals just have no leftovers. Plus it gives me variety options in weeks where I feel bored with my choices.

I'm glad I found you on Meal Plan Monday! I'm also a vegan in a "Mixed Marriage" ; ) with an Omnivore! and, I homeschool, too : )

Thanks! It's not easy being an "only-vegan" in an omnivorous family. Lately my hubby has been permitting a more-vegan menu plan. We'll see how long that lasts. He ended up going out for subs on Sunday night.
