Menu Monday (Tuesday) for 2/1/16

Sorry this is late. Yesterday got side-railed with issues related to registering son for a local community college class for dual enrollment. (The "advisor" wasn't doing much advising; son's college email account won't let him log in; he is on wait list for classes, but won't know if he gets in if he cannot log into his college email account; and on and on...) And last night was our Scout Troop's winter Court of Honor.

This dual enrollment effort has been going on for weeks, and menu planning suffered as well. With little time, it was thrown together quickly this week, so
your mileage may vary. Am still following the Bone Broth Diet model, more of an 80/20 plan now, with two bone broth fasts for me this week while family eats leftovers or other on those days. Things family is served that I'm not eating are in brackets. Here you go:


Saturday (1/30):  
B: 3 eggs scrambled w/spinach
L: salad with roast beef
D: chicken alfredo (p67 Trim Healthy Mama), [egg noodles,] zucchini (“zoodles”), carrots

Make beef bone broth

Sunday (1/31):
B: bone broth
L: bone broth
D: beef broth[steak, Caesar salad, rice]

Monday (2/1):
B: 3 eggs scrambled w/spinach
L: salad withtuna
D: Boy Scout Court of Honor dinner

Tuesday (2/2):
B: 3 eggs scrambled w/shredded zucchini
L: salad with tuna
D: pot roast with radishtoes (p50 THM) and gravy (S), green beans

Wednesday (2/3):
B: bone broth
L: bone broth
D: bone broth, leftovers

Thursday (2/4):
B: 3 eggs scrambled w/shredded zucchini
L:  salad with beef
D: hamburgers [rolls], Brussel sprouts, lettuce, tomato

Friday (2/5):
B: 3 eggs scrambled w/shredded zucchini
L: salad with tuna
D: chicken, brown rice, broccoli

Saturday (2/6):  
B: 3 eggs scrambled w/shredded zucchini
L: salad with chicken
D: date night/dinner out
