Menu Monday for 2/9/2015

Here is my vegan/carnivore blended menu plan for this week.


Sunday (2/8):
Flank steak, mashed potatoes, salad (vegan leftovers if desired)

Monday (2/9):
Lentil Soup with Cauliflower, Potatoes and Spinach, salad, whole grain bread (FOK page 103)

Tuesday (2/10):
Beef enchiladas (leftover shrapnel burritos or bean burritos), salad, tortilla chips

Wednesday (2/11):
Eggplant Polenta Casserole (FOK p 258), mixed vegs

Thursday (2/12):
Stove-top barbecue chicken, noodles, broccoli; (Mushroom stroganoff (FOK p 152))

Friday (2/13):
Stir-fried bok choy and rice in garlic sauce (FOK page 221)

Saturday (2/14):
Black Bean Soup, Salad, Bread
