Menu Monday for 1/15/18


So, truth be told, we just got back from a trip to visit potential colleges with my son. We left the mid-Atlantic states in a snow storm and flew to Phoenix, where it was 72 degrees when we landed!

We visited Sedona, Flagstaff, The Grand Canyon, and Albuquerue, NM. The weather was lows of 26 and highs in the mid-50's, while we missed a frigid arctic blast at home. It was wonderful!

So I didn't really eat what I put as my plan last week and the week before. I posted meal plans because I don't believe in announcing, "We're not home! Our house is empty!"

Anyway, we're home now. Back to real meal plans. Here you go:

Saturday (1/13):
Rotisserie chicken, scalloped potatoes, green beans

Sunday (1/14):
Sweet potato stew, salad, bread

Monday (1/15):
Beef enchiladas, salad, Tostitos

Tuesday (1/16):
Roast chicken, rice, broccoli

Wednesday (1/17):
Chili with roasted vegetables, salad, corn bread

Thursday (1/18) (CAP):
Baked teriyaki salmon, yams, California medley

Friday (1/19)
Dinner out

Saturday (1/20):
Pasta with bolonaise sauce, salad, TX toast

  1. We had rotisserie chicken yesterday and made it into chicken and rice soup with kale. So good!
