Menu Monday for 2/9/2015

Here is my vegan/carnivore blended menu plan for this week.


Sunday (2/8):
Flank steak, mashed potatoes, salad (vegan leftovers if desired)

Monday (2/9):
Lentil Soup with Cauliflower, Potatoes and Spinach, salad, whole grain bread (FOK page 103)

Tuesday (2/10):
Beef enchiladas (leftover shrapnel burritos or bean burritos), salad, tortilla chips

Wednesday (2/11):
Eggplant Polenta Casserole (FOK p 258), mixed vegs

Thursday (2/12):
Stove-top barbecue chicken, noodles, broccoli; (Mushroom stroganoff (FOK p 152))

Friday (2/13):
Stir-fried bok choy and rice in garlic sauce (FOK page 221)

Saturday (2/14):
Black Bean Soup, Salad, Bread

Black Bean Soup (Fat-Free Vegan)

I am a lover of soup right now. I find recipe hunting to be very time consuming, and since I usually tweak any recipe, making it thus my own recipe, I decided to start a thread of soup recipes on my blog. This will also make it easier for me to find the recipes I love without having to re-Search them and re-tweak them.

Today's recipe: Vegan Fat-Free Black Bean Soup

Ingredients:
  • 1 lb bag dried black beans
  • 1 large onion, diced 
  • 6 large carrots, sliced
  • 6 stalks celery, sliced
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1/2 tsp. dried thyme leaves
  • 1/2 tsp. cumin
  • 1/2 cup chopped parsley or cilantro
  • lemon or lime wedges or paper-thin slices (or can use lemon juice)
  • water or vegetable broth (10 cups)
The night before: rinse beans, sort, discard any stones or shriveled beans.

The next day, rinse beans. I like to leave them in the colander at this point so I can use the pot to cook the vegetables, thus dirtying only one pot/pan. Put the onion, carrots and celery into pot and "saute" (cook without oil, but add water if you need to to prevent sticking) for ten minutes. Add garlic and stir, watching constantly, for three minutes.

Add water or broth, beans, bay leaf, thyme and cumin. Bring to a boil, stirring. Cover and reduce heat. Simmer, checking often, for two hours. You may add more water if you deem it appropriate.

Using a slotted spoon, remove 1/4 of the "chunky" content to a bowl. With the remainder, blend with an immersion blender in the pot, or blend in standard blender in small portions to create thick, rich black bean soup that we all know and love. Add the reserved chunky portion (because I like soup you can sink your teeth into). If you prefer, blend all.

Serve topped with chopped parsley or cilantro, and put one sliver or slice of lemon or lime in each bowl. Makes 12 servings.

Serve with salad and whole grain bread.

To keep the non-vegans in my family available, I also make available for them shredded cheddar cheese, sour cream, and sometimes tortilla chips.

Menu Plan Monday for the week of Feb 2/15 at I'm an Organizing Junkie blog

Yes, late. ::sigh:: Monday there was home school, physical therapy, brownies to cook for Boy Scouts Court of Honor, then Boy Scouts Court of Honor (where a certain Boy Scout in this house was recognized for achieving Life Scout, and received Merit Badges for Emergency Preparedness, Camping, Photography, and Space Exploration...). Tuesday offered an opportunity where I thought about getting this posted but didn't. So Wednesday arrived...

Hot dogs, baked beans, potato chips, leftover salad (Vegan ate meat - tight schedule, but there were leftovers that could have been eaten.)

Pan fried chicken breasts, broccoli, stuffing (Vegan ate meat - being lazy, but there were leftovers that could have been eaten.)

Wednesday (2/6):
Big Bean Soup, salad, bread (p 98 AE)

Thursday (2/7):

Artist Study, Term 2 (2014-2015)

So, on realizing I was probably due to post this I checked my previous posts only to find that I either didn't post term 1 either, or it isn't linked to my above tab. I'm not sure which it is and I don't have time right now to figure it out. Term 1 is history now, though, right?

So the Artist Study in the Ambleside Online rotation for Term 2 for this year will focus on
Diego Velazquez (1599-1660; Spanish Baroque). Self portrait (1640):

 I feel so "parked" in this era! Not in a bad way, though, but because there is so much to study. We are reading about Wallace and Bruce (circa 1200), and Columbus (circa 1500), so this artist is a perfect fit.
